TONKOTSU SHIO RAMEN 55/100 POINTS

Noodle – 15/35
The noodles are medium thick, slightly wavy and semi-firm bite. The noodles hold well throughout the meal but taste wise is a bit lacking any distinct aroma or fragrance.

Soup – 15/35
The broth appears a little watery but the brix reading at 10.7 seems to say otherwise. It is also a little on the oily side and doesn’t leave a clean palate after each sip – perhaps the reason why we find it flat towards the later half of the meal.

Meat – 15/20
The medium thickness cut of chashu is savoury with every bite and the lightly grilled aroma comes through nicely as well. Could be better if the meat is a little more tender.

Toppings – 10/10
The eggs are good old gooey golden goodness. Nicely marinated. Not to sweet or salty. Other topping includes seaweed, picked ginger, negi and sesame seeds. The ginger and sesame seeds added a bit more layer of taste to the meal.

YUZU SHIO RAMEN 50/100 POINTS

Noodle – 15/35
Same noodles used here.

Soup – 15/35
The refreshing fruitiness of yuzu will be the first thing that hits you followed by the subtle tanginess and a clean taste of the shio base. However, the sourness does build with each mouth and make the meal less enjoyable as you go on. Could be better if the Yuzu taste is more balanced.

Yuzu flavored ramen in my opinion is one of those that tends to go really disastrous quickly if not done right. Most I’ve tried in Singapore just taste wrong like drinking some yuzu syrup – which some times puzzles me.. how much of the fruit do you need to it so overpowering?

Meat – 15/20
The shape looks a little different from the Tonkotsu version but taste the same so I assume it’s all the same.

Tamago – 5/10
Same tamago used here. The other toppings are seaweed, bamboo shoot and mizuna leaves. The bamboo shoots are surprisingly crunchy and refreshing while the mizuna leaves adds a hint of peppery bitterness to the meal.
