Review for Tokusei Ramen (Miso): 85/100
Noodle: 30/35
The noodles are medium thick and curly with a bright yellow hue. They have a firm texture, springy mouthfeel, and a clean bite. The earthy wheat taste adds to their appeal.
Soup: 30/35
The rich and cloudy soup starts sweet with a savory body, followed by a subtle spiciness and nuttiness in the aftertaste. Unlike typical miso ramen, this soup has a creamy texture and undertone instead of the usual tanginess. It’s not too oily, leaving a clean palate. It seems like a blend of miso and Tonkotsu or chicken, given its meaty sweetness.
Meat: 20/20
Beautifully presented, the undercooked slices of chashu are dipped into the soup to achieve optimal texture. They are soft, tender, chewy, juicy, and filled with mild savory and sweet pork goodness.
Topping: 5/10
The toppings include salty and mildly pungent bamboo shoots, sweet white onions (though their flavor is overshadowed), generous amounts of piquant green onions, and bean sprouts.
