The tonkotsu base, made from simmering pork belly and bones with miso, sake, and vegetables, is obtained from the surrounding region. Additionally, chicken bones from Saga Prefecture’s renowned “Arita Chicken” and flavorful pot herbs sourced within Kyushu contribute to the rich flavor profile. Careful cooking over a span of 24 hours ensures that any astringent tastes are skillfully removed. Furthermore, the roasted pork fillet used in their ramen dishes undergoes a traditional soy-sauced-based boiling method that has been passed down through generations, adding a historical touch to their culinary artistry.

Hakata Shin Shin Ramen Noodles – 95/100

Noodle – 30/35

The noodles in Hakata Shin Shin Ramen are incredibly thin, resembling angel hair pasta, and they possess a unique “meesua” slurping quality. The firm and al dente bite is enjoyable, but there’s a distinct wheat taste or a taste that reflects the water used in the noodle-making process that may be an acquired preference.

Soup – 35/35

The soup boasts a rich brix reading of 10, which aligns with most classic Hakata Tonkotsu ramen. However, Shin Shin’s soup has a slightly more fluid consistency and offers a light and refreshing taste, despite its measured “thickness.” The combination of a subtly sweet Tonkotsu base and the savory notes from the tare delivers a well-layered and clean aftertaste.

Meat – 20/20

The braised meat presents a delightful balance of sweetness and savoriness. The deeply marinated pork bursts with pleasant flavors, and the tender texture, coupled with the melting fatty portions, creates a delectable experience.

Toppings – 10/10

The toppings in Hakata Shin Shin Ramen are relatively simple, consisting of black fungus and negi, which didn’t particularly stand out. However, the marinated egg is a highlight. The well-balanced marination ensures the egg retains its fresh taste, perfectly complementing the overall meal.
