Chicken Chashu Collagen Ramen 50/100

Noodle 10/35
The noodles used are medium thick and wavy. The texture is soft and borderline mushy. Overall rather poor bite. Could be due to the fact that the noodles are cooked twice. It’s first boiled and thrown into a wok to stir fry out the wok hey flavour. Taste wise is quite average.

Broth 25/35
The restaurant has no pork or lard (although I didn’t see any halal sign when I visited). The soup is made with a rich chicken broth that has a slightly sweet base followed by lips smacking savoury flavours. Despite the high brix value, the greasiness is well controlled and not too oily. A hint of Wok Hey from the noodles were also transferred to the soup which gives another layer to the taste. However the Wok Hey taste could be a little stronger.

Meat 10/20
The chicken chashu had a noticeable odour and a little tough for chicken – it gets more evident towards the middle of the chashu. However, the skin is still quite soft and tender. The texture reminds me of the Chinese Drunken Chicken where fillets of chicken meat are rolled up with skin around it.

Toppings 5/10
The egg is not bad with balanced marination. The other toppings includes some black fungus, negi and sesame seeds. Not sure if the sesame were grounded before being added but the aroma wasn’t quite there.

Prawn Paste Ramen 35/100

Noodle 10/35

The broth here is prawn based. Despite the high brix value that shows the richness of the broth, the taste is rather flat and prawny. It tasted more like Singaporean Prawn Noodle Soupy unlike the fusion take from Le Shrimp Ramen which is a more creamy. The Wok Hey taste is noticeable here but wasn’t very complimenting, resulting in a slightly bitter aftertaste. The soup is also a little spicy – again the flat kind that just leaves a burning sensation down your throat without adding much complexity to the flavours.

Meat 10/20
The prawn ball looks pretty good visually but lacks texture – soft and mushy. Not much taste to it either. Maybe because the broth is already quite prawny.

Toppings 5/10
Eggs are ok. Other toppings includes black fungus and negi. Nothing significant in layering the taste.
