Noodle 20/35
The noodles used send to be the same here – thick, wavy, springy with a slightly chewy bite. Taste wise is just average.

Soup 20/35
The soup here is made with aged miso that gives a slightly “acidic” like taste. The flavours and saltiness of the miso is also more intense here. Imagine a grittier miso with a sharp note of it’s miso fermentation at the start, followed by the earthy flavours and a subtle bitterness accompanying it.

Meat 20/20
The chashu is generously sliced. The meat a little tough but not dry. It’s one of those that you have to keep chewing to break the fibers but with each chew you get a mouthful of flavours from the marinated pork. Taste wise, it’s got a nice aburi taste to it that also gives the soup a little smokiness.

Toppings 5/10
The egg was average. The other toppings includes beansprouts, long beans, and some fried shallots that added a subtle layer of sweetness. There’s also some minced meat which are nice and salty addition to the meal. But overall nothing really special in adding complexity to the taste.

Kyushu miso / Kyushu Mugi Miso Ramen 70/100

Noodle 20/35
The noodles used are the thick and wavy Sapporo ramen type of noodles. The bite is more on the chewy side. Taste wise was average. Nothing really notable. Passable.

Soup 30/35
The soup was good. It’s rich, flavourful with a distinct sweetness from the malted barley miso – Kyushu Mugi Miso is a variant of miso made from malted barley. The result is an earthy sweetness that layers on top of your familiar miso taste.

Meat 15/20
Instead of a chashu, I’ve got a fishcake! It’s soft and springy on the inside. Ingredients on the fish cake adds more taste with each bite as you get to them in the meal.

Toppings 5/10
The egg was average. The other toppings includes beansprouts which tasted normal, asparagus that was too fiberous, and some fried shallots that added a subtle layer of sweetness. Nothing really mind blowing in adding complexity to the taste.
