No Fukuoka ramen pilgrimage is complete without a stop at Ichiran HQ. While the menu may appear similar to other branches, the crucial question remains: how does it compare to the rest?

Ichiran Select 5 and Select 3 – 80/100

Noodle – 30/35

The straight and thin noodles boast a firm texture with an enjoyable al dente bite. The overall mouthfeel is satisfying, and the long noodles slurp effortlessly.

Soup – 30/35

Being at the headquarters might have created some placebo effect – the broth at this particular location appears slightly stronger and spicier. It encompasses the familiar sweetness of Tonkotsu broth, the subtle tanginess of shoyu undertones, and the iconic lingering burn in the throat that Ichiran is known for. In all honesty, I think it remains consistent with the quality experienced at other Ichiran outlets throughout Japan.

In terms of brix reading, it fares admirably against the standard benchmark for Tonkotsu, which typically hovers around 10 brix.

Meat – 10/20

The thinly sliced chashu strikes a balance between softness and firmness, while carrying a notable pork flavor. However, the marination appears to be slightly lighter compared to expectations.

Note: The key distinction between Select 5 and Select 3 lies in the quantity of meat and toppings provided. Otherwise, both options essentially offer the same components and flavors.

Topping – 10/10

As expected, the marination of Ichiran’s egg adds a delightful and clean taste to the overall experience, serving as a standout highlight. The remaining toppings, such as negi (green onions) and crunchy black fungus, provide average but enjoyable additional texture to the meal.
