TONKOTSU RAMEN WINTER 75/100

Noodle – 30/35
Noodles are straight, medium thin and firm. The mouthfeel was al dente and the taste carried a light aroma of the noodles.

Soup – 25/35
The broth is rich and thick which is evident from the frothy soup and floaty bits of fats. Porkiness was well balanced in bringing out the meatiness of the broth as well. However, the soup can feel a little flat after a while – a more classic take of Tonkotsu i feel but that’s also the trade-off for those looking for something a little different.

Meat – 10/20
The meat is darker in colour than other chashu around but the marination was done well and not too salty. However, the texture is a little tough and lacks deeper flavour when chewed into.

Toppings – 10/10
Well marinated. Not too salty and the marination complimented the meal well. Other toppings include some black fungus and negi. But again with all Keisuke outlets, the star topping is the marinated beansprouts.

TONKOTSU KING RAMEN 90/100

Noodle – 30/35
Noodles are straight, medium thin and firm. The mouthfeel was al dente and the taste carried a light aroma of the noodles.

Broth – 30/35
Savoury sweet with a hint of ginger. Take a classic Tonkotsu broth but had a layer of sweetness from the caramelised onion and marination of the stir fried pork. Add in some of the spicy marinated beansprout and you have a very complex broth that is worth slurping every drop.

Meat – 20/20
Contrary to the typical chashu, you get stir fried pork with ginger. The meat is very tender and the fatty bits just chewy enough to give you the right mouthfeel. However, the taste wise is pretty much dominated by the sweetness so it gets a little flat after a while.

Toppings – 10/10
Well marinated. Not too salty and the marination complimented the meal well. Other toppings include some black fungus and negi. But again with all Keisuke outlets, the star topping is the marinated beansprouts.
