JET BLACK RAMEN 80/100 points

Noodle – 25/35

The thin and straight Hakata-style noodles offer a satisfying bite. It would be even better if the fragrance of the noodles was more pronounced.

Soup – 30/35

Although the broth may appear slightly watery, its taste reassures you that it’s a rich and flavorful bowl. It carries a savory and mildly spicy profile with hints of sesame and garlic. While the squid ink flavor doesn’t stand out, it adds an extra umami layer. Overall, it’s a pretty good broth.

Meat – 20/20

The Chashu is incredibly tender, providing a melt-in-your-mouth texture. Its taste is well-balanced without being overly salty or dominated by porkiness. The only minor complaint would be that the slices are a bit thin.

Toppings – 5/10

The texture of the egg is satisfactory, but it leans towards being too salty in taste. Apart from the bamboo shoots, there’s a black marinated minced meat condiment to mix into your soup. The savory meat chunks at the bottom of the bowl are like hidden treasures waiting to be discovered as you reach the end of your meal.

PURE WHITE RAMEN 65/100 points

Noodle – 25/35

The noodles are the same as before, thin and straight Hakata-style. The bite of the noodle is enjoyable, but it would be even better if the fragrance of the noodles was more pronounced.

Broth – 15/35

The consistency of the broth remains thin, similar to the previous ramen. However, the richness doesn’t compare to the Jet Black Ramen. There’s a peculiar taste of pork and something else that is hard to pinpoint. It might be the ginger, but overall, the broth felt overly porky for a thinner broth.

Meat – 20/20

The Chashu remains the same, and it’s still one of the best we’ve had. The Chashu is incredibly tender, providing a melt-in-your-mouth texture. Its taste is well-balanced without being overly salty or dominated by porkiness. The only minor complaint would be that the slices are a bit thin.

Toppings – 5/10

Similar to before, the eggs are too salty and overly marinated. Unlike the Jet Black version with its delightful gloop of goodness, there’s nothing exceptional here. Just some negi, black fungus, and ginger toppings that don’t add much to the overall experience.

CONCLUSION

The menu at this place is impressively extensive, offering a variety of options like white, red, pink, amber, black… I must admit, I lost track while perusing through their menu. Although we’ve only sampled two of their ramen dishes so far, I can imagine that the rest are equally decent. We’re eagerly anticipating the opportunity to try them in the near future.
