For those unacquainted with Shinsho Ramen, you’re not alone. We stumbled upon this hidden gem by chance and were initially skeptical about its authenticity. However, we were pleasantly surprised to discover that Shinsho Ramen holds its own against some of the finest establishments in town. Prepare to be captivated by the unique flavors and genuine Japanese experience that Shinsho Ramen has to offer.

AGED SOY SAUCE RAMEN 80/100 points

Noodle – 25/35

The thick and wavy noodles in this ramen resemble the ones commonly found in Shoyu ramen. They offer a delightful springy and chewy texture, holding up well in the broth. However, the noodle itself lacks a distinct aroma that could enhance the overall experience.

Soup – 30/35

Prepare to be amazed as you lift the bowl and slurp down every last drop of the soup. The savory, sweet, and aged soy sauce flavors create a delightful symphony on your palate. The only slight drawback is the soup’s consistency, which could benefit from a touch more thickness. Nonetheless, the lingering aroma and distinct taste make it a memorable bowl of ramen.

Meat – 15/20

The generous portion of Chashu in this ramen is a true delight. It retains its shape while effortlessly melting in your mouth. The slightly sweeter aftertaste adds a unique twist, but it could be more pronounced to stand out amidst the flavorful broth and other components.

Toppings – 10/10

Prepare for a culinary journey with the delectable toppings in this ramen. The half-egg alone is worth ordering more, striking the perfect balance between saltiness and sweetness. Cooked to perfection, it boasts a tantalizing golden gooeyness at its core.

Accompanying the egg are a variety of thoughtfully chosen sidekicks, including menma, negi, fried garlic, cherry tomato, sesame seeds, minced pork, and baby corn. While the menma and negi could have had a stronger presence, the refreshing baby corn and juicy cherry tomato contribute an extra layer of flavor. The fragrant minced pork adds a savory touch, elevating your ramen experience.

BLACK GARLIC RAMEN 75/100 points

Noodle – 25/35

Indulge in the thicker wavy noodles, reminiscent of the ones typically found in Shoyu ramen. Their springy and chewy texture pairs perfectly with the rich broth, holding up admirably. However, the noodles lack a distinctive aroma that could elevate the overall experience, especially in conjunction with this particular broth.

Soup – 25/35

The soup boasts savory and sweet notes, similar to the aged soy sauce ramen. However, there’s a dominant taste of sesame oil that slightly overwhelms the garlic element. Nevertheless, it remains a satisfying broth, beckoning you to savor every last drop.

Meat – 15/20

Prepare to be delighted by the generous serving of Chashu. It retains its shape while melting tantalizingly in your mouth. The Chashu exhibits a subtle, sweet aftertaste, adding a unique touch. However, the overall flavor could be more robust, as it tends to get overshadowed by the soup and other elements.

Toppings – 10/10

The inclusion of half an egg in the meal left us craving for more. The egg strikes the perfect balance between saltiness and sweetness, expertly cooked with a golden gooeyness at its core.

Accompanying the egg, a delightful array of sidekicks awaits, including menma, negi, fried garlic, cherry tomato, sesame seeds, minced pork, and baby corn.
